This quick, easy, and delicious banana bread recipe is a family favorite, passed down to me from my Gigi. (maternal grandmother) When I got married it was one of many she included in a recipe book that she gifted me with family recipes from all of the women in my family. It is always a crowd pleaser and great to gift to others.

Connecting Heritage To Family Recipes
My Gigi was a pastor’s wife, missionary, mother of 4, homemaker, and servant. As I write this she is nearing the end of her journey here on this earth. But although she is weak and frail, in her short moments of clarity she is constantly wanting to serve others. This recipe always reminds me of that character trait of hers.
Because it is so easy to make, I decided long ago that each time I made her recipe I would double it. One for my family to enjoy and another to bless someone who needed a little pick me up or encouragement. I can’t think of a better way to honor the heritage that Ruth Bowman has passed down to me. I hope to be just like her one day and create a lasting heritage as a homemaker.

Gigi’s Two Egg Banana Bread Recipe

Ingredients

- 2 cups of unbleached, organic, all purpose flour
- 1/4 cup of sugar
- 1 tsp of baking powder
- 1 tsp salt
- 1/3 cup of shortening or butter
- 1/2 cup of butter milk
- 1 cup of mashed bananas (approximately 2-3 ripe bananas)
- 1 tsp of vanilla
- 2 eggs
- Optional add-ins- blueberries, chocolate chips, or chopped pecans

Pre-heat oven to 325 degrees.

Add all dry ingredients (flour, sugar, baking powder, salt) to a large mixing bowl, and mix together thoroughly.

Mix in wet ingredients: butter milk, eggs, vanilla, and softened shortening or butter. Mix well with stand or hand mixer until you achieve a smooth batter consistency.

Fold in 2-3 mashed ripened bananas, as well as optional additions: blueberries, chocolate chips, or pecans.

Pour batter into buttered regular bread loaf pan, or two smaller loaf pans. Bake at 325 degrees until golden brown and fully cooked in the middle.
